Arroz de Matanzas

‘Arroz de matanzas’ (rice of slaughter) is a typical Ibiza dish traditionally prepared during the pig slaughtering season. It features pork, bacon, and bones cooked with rice, along with ingredients like onions, garlic, and slaughter broth. Additional elements such as potatoes, bell peppers, peas, or green beans can be added. The dish simmers slowly until the rice is tender, representing Ibiza’s culinary tradition and culture, often served during events related to pig slaughter.

Sofrit Payés

‘Sofrit payés’ is a traditional dish in Ibiza’s cuisine that combines various meats, including lamb, chicken, and pork, with local vegetables and aromatic herbs. It is slowly cooked in a large pot with olive oil, onions, garlic, and bell peppers. Ingredients such as potatoes, carrots, and peas are added, seasoned with local herbs and spices. Over low heat, the flavors meld and intensify, and it is served as the main course with crusty bread and ‘alioli,’ showcasing the rustic and traditional cuisine of Ibiza.

Grilled Meats

Grilled meats are our specialty; there is no need for paella or fish. The Ibizan free-range ‘Payés’ chicken, naturally raised with barley, corn, or alfalfa, is one of the healthiest grilled meat choices. The leg of lamb or mixed lamb are always excellent options, and our kitchen also prepares dishes like pork ribs, chops, or sirloin, not to mention typical meats such as T-bone steak, beef tenderloin, rabbit, or a delightful mixed grill. To accompany your meal, don’t forget to order the famous roasted potatoes as a side.

Homemade Desserts

Two of the homemade desserts you can enjoy at our restaurant are ‘flaó’ and ‘crema catalana.’ ‘Flaó’ is a traditional dessert combining ingredients like fresh cheese, mint, eggs, and sugar. The freshness of the cheese alongside the sweetness of sugar creates an irresistible delight that you must try; a visit to Ibiza is not complete without it. If you prefer a smooth and sweet dessert, ‘crema catalana’ is your choice. Prepared with milk, a hint of lemon and cinnamon, combined with egg yolks and a thin layer of caramelized sugar on top, providing a delightful crunch. However, if neither of these desserts appeals to you, we also offer flan, ‘greixonera,’ coffee or coconut pudding, figs and almonds, aged cheese, fresh pineapple, lemon sorbet, and ice cream.
